Arara Natural Tasting Notes

Big, surprising melon flavors kick off this coffee’s profile. Like most Brazilian coffees, it has a mellow acidity. You'll taste cantaloupe and honeydew, which vary in prominence depending on the brewing method. There are also delicious hints of ripe banana. The coffee features sweet malted grain notes that mix with bold milk chocolate and dulce de leche flavors, creating a taste reminiscent of a chocolate malted milkshake.

Nestled in the heart of Três Pontas, southern Minas Gerais, Terra Nova Farm is renowned for its commitment to excellence in coffee production through continuous modernization. Owned and operated by agronomist Danilo Mesquita Andrade, the farm places a strong emphasis on environmental, social, and economic sustainability.

From the outset, Danilo sought to transform the farm’s structure and production processes to meet high standards. Together with his son, Frederico Andrade, they have implemented strategic changes that earned the farm Rainforest Alliance and Carbon Neutral certifications.

This coffee features the Arara variety, a cross between Obatã and Yellow Catuaí, celebrated for its striking yellow beans that echo the color of Brazil's vibrant macaws. It's processed using an anaerobic method, where the coffee cherries are fermented in a low-oxygen environment to deepen the flavors. This innovative technique enhances the natural sweetness and introduces a rich complexity to the coffee.

The anaerobic process not only elevates the fruity melon and ripe banana notes but also accentuates the Arara’s smooth and balanced cup quality

How To Brew This Natural Process Single Origin

A 1:14 brew ratio of around 200°F yields balanced sweet cups.
