Dragon Pearls Jasmine Tea
Description
Floral, Fresh, Delicate
Top grade, silver-tip green tea buds along with the two youngest leaves rolled into tight balls for drying. This technique retains the flavor of the tea and lengthens the drying process increasing the complexity of the tea. Cups have deep, ethereal florality and sweet, delicate, refreshing finishes.
Origin:
Fujian Province, China
This tea is grown in the Fujian province of China. Fujian is arguably the best tea growing region in China. The province is located on the southern coast of China and features stunning mountains. The altitude and proximity to the ocean brings cool nights while the southern latitude helps bring abundant rainfall and warm daily temperatures.
Dragon pearls are made from the two freshest tea leaves, the budding tip of the branch, and the tiny section of stem that connects them as the tea begins to grow and unfurl in spring. The silver tip is due to the lack of chlorophyll development in the tip.
The tea is rolled into tight balls which prevents oxidation of the interior and retains the delicate tea oils. The tea is dried over a period of several days and is layered with jasmine flowers that are periodically replaced to impart the unmistakable ethereal florals of jasmine into the pearls.
The bud, first leaves, and fresh stem can all be separated into individual teas but the combination of the three results in a cup greater than the sum of its parts. This tea produces delicate, moderately bodied cups, high in antioxidants, low in bitter tannins, and has a complex, sweet, floral flavor.
Brew Notes
We recommend steeping three to four grams of tea (one to two tablespoons) per 8 to 10 ounce cup. It is critical that water is much cooler than boiling. We recommend starting with 185℉ water and a 1:45 steep. To increase or decrease the intensity of the cup use a slightly more or less steep time. Astringency will increase with higher water temperatures and longer steep times.
This tea also does extremely well with additional steepings.
Dragon Pearls also makes absolutely incredible, enormously refreshing cups of iced tea. For an iced version, simply use the same brewing times and amount of tea, only half the amount of brew water (4–5oz), and pour the brewed tea directly over the same amount of ice (4–5oz.)
