This coffee features exceptionally well balanced sweetness as well as malic and tartaric acidity. The experience is something akin to tasting a suite of chocolate ranging from sweet milk to semisweet dark chocolate paired with apple, grapes, stone fruit, and plum.
This coffee is produced by a single female farmer who operates a farm that occupies just 2 hectares of land. The coffee is carefully cared for and grown in the shade of Chalun trees. The shade trees help produce higher quality coffee by cooling growing temperatures and slowing the ripening process, as well as providing habitat for birds and other insect species which keep coffee pests in check.
Like so many other coffee farmers in Central America, the husband of the current operator was forced to immigrate to the US in search of a livable source of income. For his wife and family this meant they had to take over the struggling operation of the coffee farm. With hard work and a bit of outside financial assistance, the farm has been able to invest in a quality based approach to coffee production.
Black Oak was able to purchase the entire crop of coffee produced on this tiny farm at far more than broader market prices. This allows the farmer to operate at a healthy profit margin, which in turn is used to further the production of high quality coffee that continues to command a premium.

Brew Notes: This coffee produces great cups with a wide range of brew techniques. We recommend using a 1:16 brew ratio and steeping with 205℉ water for no more than three and a half minutes.
